Red Lentil Soup

Since the end of July when I was first diagnosed with Candida I have tried sooo many new recipes. Some have been a success, others not-so-much.

I bought some red lentils several weeks ago after seeing several red lentil soup recipes online.

I dashed home from work and gathered the ingredients.



I friend the onions, garlic and cumin while the lentils cooked.



I cooked the soup for about half and hour.



And then ta-da. Homemade red lentil soup.



I didn't love it. It was okay I guess. Perhaps an acquired taste? I know I blew it with the cumin. I don't really like cumin and as I was adding it to the onions I knew I was making a mistake.

I can't find the link to the recipe I used. When I searched "red lentil soup" most of the recipes were very similar, so I don't think it really matters which one you follow. If you make it, I hope you have better luck than me!

I'd love to hear what your favourite soup recipe is! I really really need ideas.

I've never tried red lentils - I have a greek lentil soup recipe that my kids love, though. I think my fave is french onion though- saute a BUNCH of sliced onions in olive oil till soft, add some good beef broth, simmer for half an hour, add salt and fresh ground pepper. It is sooooo good. Just add some good swiss or gruyere cheese to the top, yummmmm.

Hi!!! It's great to hear from you! I'm so sorry you were feeling so bad for so long, but I'm glad you were abel to figure out what was wrong and are now feeling better and better. My Dh likes to make soup. He likes to cook, so I don't cook very much. I like any soup he makes. ... and by the way, you look great! You look so happy in your pics and that's beautiful!

Lentil is one of my favorite. Even the kids love it. I make mine with 1/2 tsp turmeric, 1/2 tsp coriander, 1 tsp ginger and 1 tsp cinnamon. I also add a can of light coconut milk at the end. It gives a very creamy and rich taste. I also add carrots with the onions too.

I hope you are feeling better.
